Easy Potato Salad

1 canned whole potatoes

3 tbsp. sour cream

2 boiled eggs

2 tbsp. chopped onion

2 tbsp. mustard

1 cup diced celery

Drain and cube potatoes, combine all ingredients with the potatoes and mix well. A little sugar can be used.

Broccoli Salad

2 lbs. of broccoli, trimmed and cut into one-inch pieces.

1/2 c. chopped red onion

1/2 lb. cooked bacon crumbs

1/2 cup cheddar cheese cut into cubes.

Dressing:

1 cup mayo

1/2 cup sugar

2 T. apple cider vinegar

Combine broccoli, bac-on, cheese and onion in a large bowl. In another bowl, combine dressing ingredients. Add to salad and toss. Serves 10.

Cherry Pecan Salad

1 c. chopped unpeeled apples

2 T. chopped maraschino cherries

1/2 cup chopped walnuts

1/2 cup chopped celery

1/2 cup mayo (do not use salad dressing)

Combine all ingredients and mix well.

Dressing for fruit Salad

1/2 cup orange juice

1/4 cup salad oil

1 tsp. sugar

1/2 tsp. salt

1/2 clove garlic crushed

Combine all ingredients in jar and shake well. Cover and chill several hours before serving on fruit salads.

Storage times for foods.

Margarine kept in refrigerator 1 month, 3 to 6 months in freezer.

Pineapple Pudding

1 pkg. instant vanilla pudding

Vanilla wafers

1 can crushed Pineapple (drained)

Make pudding according to directions on box. Put one layer of pineapple in a dish and a layer of vanilla wafers on top of pudding over wafers. Follow until all ingredients are used.

Pineapple Salad

1 can crushed pineapple

1 pkg. lemon gelatin

1 qt. vanilla ice cream

Drain pineapple, reserving juice. Add enough water to make one cup. Heat, then dissolve gelatin. Add ice cream and pineapple. Stir well. Chill until firm.

Cooking hints:

Use an empty baking powder can to chop potatoes for hash browns.

Start cooking vegetables that grow in the ground in cold water and cover cooking pan with a lid.

Household hint

To remove tea or coffee stains from cups and glasses, add a little water and bleach to the cups and glasses and let stand for 10 to 20 minutes, or longer if the stain is not gone.
