Ginger raisin muffins

1-16 oz. box gingerbread mix

1 1/4 c. lukewarm water

1 egg

2-1.5 oz. boxes seedless raisins

Combine gingerbread mix, water and egg and mix well. Stir in raisins. Bake in greased cup liners in muffin tin and fill halfway. Bake 20 minutes at 350 degrees or until done.

Turkey or chicken salad

1 to 2 cups cooked turkey or chicken

1 to 2 boiled eggs

1/2 cup copped celery

1/2 cup mayonnaise


Combine all ingredients and mix well. Serve on lettuce leaves.

Ham and English pea salad

1 to 2 cups cooked ham

1 can English peas, well drained


1/2 cup mayonnaise

Combine all ingredients in a bowl and mix well. Chopped ham luncheon meat can also be used.

Mustard dressing

1/2 cup mustard

1/2 cup sour cream

Combine mustard and sour cream and mix well. Serve on sliced ham or hot dogs.

Potato salad

2 to 3 medium potatoes

2 tablespoons mustard

2 tablespoons sour cream

1/2 tsp sweet relish

Cook potatoes in water until tender. Dice potatoes after cooking and add mustard, sour cream and relish and stir until blended.

Fall punch

1 jar apple juice

1 bottle ginger ale

Combine juice and ginger ale and pour in a glass.

Clam dip

2 cans canned clams

2 cups sour cream

Drain clams and stir in sour cream until blended.

Apple juice float

4 cups apple juice

4 cups vanilla ice cream

Stir juice and ice cream until blended.

Brussels sprouts

1 package frozen Brussels sprouts

1/2 cup lemon butter

Cook Brussels sprouts according to package directions. To make lemon butter, add 1/2 teaspoon lemon juice to 1/2 cup melted butter and mix well. Pour over Brussels sprouts.

Butter beets

1 can beets, drained

1/4 tsp. nutmeg

1/2 cup melted butter

1/2 tsp. sugar

Combine drained beets with nutmeg, butter and sugar and stir until blended.

Company sweet potatoes

1 can sweet potatoes, drained

1 small can crushed pineapple

1/4 tsp. cinnamon

Mash potatoes and combine pineapple and cinnamon, blend well.

Sour cream dressing

1/2 cup sour cream

1/2 cup mayonnaise

1/4 tsp. lemon juice

Combine all ingredients in jar and shake well.

Among the chief reasons why the colonists came to America during the 17th and 18th centuries were for economic, freedom, fish, game and for more opportunity than they had in Europe. The first group came for religious purposes, which were the pilgrims and the separatists. Those coming to America were in danger of being captured by wild animals or Indians. More than half of the pilgrims met their death before the following spring. In 1619, a boatload of English women was brought to Jamestown in order to increase the stability of the colony. Men outnumbered women and it was considered a disgrace to be an old maid. A good Thanksgiving vacation would be to visit colonial Jamestown, Williamsburg and Plymouth Rock.

Breakfast juice

1 cup pineapple juice

1/2 cup prune juice

Mix together and stir.

Fried squash

2 to 3 yellow squash

1 pkg. cornmeal muffin mix

celery salt

Wash and slice squash. Use 1/2 cup or more of muffin mix to batter them and cook on both sides in a little cooking oil until they are done.

Imitation sausage

Leftover black-eyed peas

1 egg

1/8 cup chopped onion

1/2 cup flour or more to make Mixture hold together. Mash peas. Add all ingredients and mix well. Make into patties and fry until done in a little cooking oil.
