Scare up some delightful Halloween fare

Get your kids excited about Halloween with a scary supper. This devilishly delicious meat-and-potatoes meal will fuel kids for an evening of pumpkin carving, trick-or-treating, haunted hay rides and more.
Ghostly Meatloaves are easy to make and fun to eat. A Mini Ghost Pan makes these haunted entr/es extra-simple – perfect for a weeknight celebration (Halloween falls on a Wednesday this year). When making the meatloaf mixture, choose lean ground sirloin or ground turkey – whichever your family prefers. For the ghostly mashed potato topper, use homemade leftovers or the prepared refrigerated or frozen variety.
Nobody will be saying "boo" about eating their vegetables at this frighteningly festive meal. Encourage kids to decorate their "ghost" with sides of peas, carrots and a few olives. The mini meatloaves are the perfect size for kids; mom and dad may want to eat two.

GHOSTLY MEATLOAVES
Makes 12 mini ghosts
1-3/4 pounds 85 percent lean ground sirloin or ground turkey
3/4 cup dry bread crumbs
1/2 medium onion, finely chopped
1/4 cup firmly packed brown sugar
2 egg whites
2 tablespoons tomato paste
3/4 teaspoon salt
3/4 teaspoon pepper
6 cups hot mashed potatoes
12 frozen peas, thawed
6 slices black olive
Preheat oven to 350¡F. Mix ground sirloin, bread crumbs, onion, brown sugar, egg whites, tomato paste, salt and pepper. Do not over mix or loaf will be heavy. Lightly spray Wilton ghost pan cavities with vegetable pan spray. Press mixture into pans. Bake 25 to 30 minutes or until internal temperature reaches 160¡F for ground sirloin or 165¡F for ground turkey and juices show no pink color. Remove loaves from pan; drain. Spread 1/2 cup mashed potatoes over each loaf. Position frozen peas for eyes and olive slices for mouth.
Nutrition information per serving: 270 cal.; 8 g total fat; 2 g sat. fat; 0 g trans fat; 33 g total carbs; 2 g fiber; 600 mg sodium; 35 mg cholesterol.
