Cosmopolitan Cornbread: Roasted Radishes

Now that cooler weather is here, many people have their fall gardens going – myself included. The fall garden is the best place to grow all those wonderful root vegetables like beets and carrots, but a much-underrated root veggie is the radish.
Some people steer clear of radishes because they think they are too spicy, but when you roast a radish, it loses its heat and is full of rich flavor. I love making this dish with Daikon radishes, but you can use whichever variety you prefer.
