Franklin Harrison honored on birthday

Franklin D. Harrison of Decatur celebrated his birthday last Thursday with lunch at The Freight House. Helping him celebrate his special day were his wife, Sue, and his sister, Adell Gibson, and her husband, Herman.

Potato Croquette Balls
1 egg yolk
1 tspn. minced parsley
1/4 tsp. celery salt
2 cups cold mashed potatoes
Fine bread crumbs
1 egg, beaten
2 tbsp. water
Add egg yolk, parsley, celery salt to potatoes, mix well. Form into small balls and roll in crumbs. Dip into eggs diluted to water, roll in crumbs. Deep fry in vegetable shortening heated to 385 degrees for 40 seconds or until brown. Remove carefully, drain on paper towel. Makes six servings.
The potatoes are leftover mashed potatoes that have been cooled.

Spinach Italiano
2 tbsp. oil
1 small onion, finely chopped
1/2 cup spaghetti sauce
1/8 cup parmesan cheese
1 tsp. oregano
2 packages frozen spinach
Heat oil in sauce pan, brown onion slightly. Add spaghetti sauce, cheese and oregano. Simmer for five minutes. Add spinach, cook until spinach is done. Eight servings.

Sweet Potato Souffle
3 cups cooked mashed sweet potatoes
3 tbsp. melted butter or margarine
1/2 cup sugar
1 egg, beaten
1/2 cup raisins
1/2 cup crushed pineapple
1 tsp. vanilla flavoring
8 marshmallows
Combine all ingredients except marshmallows, mixing well after each addition. Place in baking dish. Bake at 350 degrees for 20 minutes. Top with marshmallows, brown. Eight servings.
Hint for the week: Get a menu from the restaurant you frequent and take it home with you. Keep these in a file and before you get ready to go to dine out check the menu for that restaurant. That way, you will not have to take the time to read the menu.
If you are going to order steak or any other food that must be cooked, call the restaurant and place your order and your time of arrival and state your name and they will have the order ready for you. This saves time in waiting for this food to be cooked.
Also, have the correct money for the bill. This also saves time in having to wait for change.
