Tasty treats to enjoy on chilly nights

Dear Mom’s Corner,
Now that it’s cooling off I would like a couple of really quick hot meals like chicken ‘n dumplings or some other kinds of soup?  Do you have any suggestions?

Dear T.L.,
I know what you mean.  I can hardly wait to start fixing those warm comforting meals.  Let me share a couple of my favorite fall/winter dishes with you.
The first one is “The World’s Fastest Chicken ‘n Dumplings.”   The ingredients are: 32 ounces of chicken broth, 1 can of cream of chicken soup, 1 large can of chicken,  and  2 packages of refrigerated biscuits.  Combine the broth, soup, and chicken in a large sauce pan and bring to a boil on medium high heat.
While that is starting to boil tear or cut each biscuits into 4 to 6 pieces, depending on how big you want the dumplings to be.  When the broth is just starting to boil slowly begin adding biscuits, stirring frequently. Cook on a low heat until the dumplings are done usually under 10 minutes.  Add salt and pepper to taste.
Another quick favorite soup dish is “Broccoli Cheese Soup.”   Ingredients:  6 cups of chicken broth,  1 can cream mushroom soup, 2 cups of peeled and diced potatoes, 1/4 to 1/2 small onion chopped, 1 package frozen broccoli and cauliflower mix, 1 to 11/2  lbs. Velveeta type cheese cubed.
Using a large sauce pan or stock pot mix broth, potatoes and onions, cook on medium heat until potatoes are about half done add frozen vegetable mix and continue cooking until vegetables are tender. (Note: Vegetable mix does not have to be thawed.  It will just take a little longer to cook if it is frozen.)
When vegetables are done add cream of mushroom soup and stir until well mixed.  Add Velveeta and stir until melted.
Also be very careful if adding salt to this dish, it is easy to over salt.
This is often served in our home with warmed rolls or warmed buttered French bread.
