Beef Stroganoff
Ingredients
1 lb. ground beef
2 tbsp. vegetable oil
1/4 cup chopped white onion
1/2 cup milk
3/4 tsp. salt
1/4 tsp. pepper
1 12-oz. pkg. egg noodles
1 8-oz. pkg. cream cheese
1 12-oz. can whole Mexican corn
1 can cream of chicken mushroom soup
1 pepper of your choice for garnish.
Directions: Brown beef in oil, add onion and cook until tender. Drain meat, stir in milk and cream cheese and stir until smooth. Add corn (save a little for garnish), cream of mushroom soup, salt, pepper and cooked noodles. Pour into large greased casserole dish. Bake at 350 degrees for 45 minutes. Slice pepper and put it and the corn on top to garnish.

Tuscan Short Ribs with Polenta
Ingredients
4 or 5 beef short ribs
baby carrots
celery cut into 1 inch sticks
4 or 5 clove garlic thinly sliced
beef stock
olive oil
1 tbsp. tomato paste
sea salt and coarse pepper to taste
1 tbsp. Worcestershire sauce.
Directions: Pre-heat oven to 350 degrees. In a large ovenproof pan with lid, add tomato paste right before it goes into the oven and add enough oil to coat bottom of pan to 1/4” deep. Brown ribs in pan on all sides over medium high heat, Remove ribs, reduce heat to medium and add a garlic saut/ing until golden. Put ribs back in pan and add beef stock to just cover ribs, add vegetables, remaining ingredients and transfer covered pan to oven.
Cook 2 hours or until ribs are tender. Serve over polenta.

Cheeseburger Macaroni
Ingredients
1 lb. ground beef
1 onion, chopped
1 bell pepper, chopped
1 lb. elbow noodles
1 lb. Velveeta cheese, cubed
1 cup mild cheddar cheese, shredded (topping)
salt and pepper to taste.
Directions: Brown beef and drain. Saut/ onions and peppers together, Cook noodles according to package directions. Drain noodles and pour noodles into a 9×13 casserole dish. Add meat. Onions, peppers and Velveeta cheese, Bake at 350 degrees F. for 30 minutes or until bubbly. Add shredded cheese to top and serve.

Fried Beef Pies
Ingredients
2 cups flour
1/4 cup shortening
2/3 cup milk
1 1/2 lbs. ground beef
1 large pepper
1 onion
1 tsp. garlic
1 (15-oz.) can Manwich sauce.
Directions: Mix flour, shortening and milk in large bowl. Roll dough into quarter size balls. Brown meat and mix bell pepper and onion in beef. Once cooked stir in the Manwich sauce, salt and pepper. Sit aside. Flatten each quarter size dough ball. Put in a tablespoon of the mixed meat in the center. Fold the dough over. Fry until golden brown.

Mexican Lasagna
Ingredients
1 package (8-oz.) lasagna noodles
1 1/2 lbs. ground beef
1 medium onion, chopped
1 red pimento or pepper, chopped
1/4 cup chopped fresh cilantro or parsley
1 tsp. chili powder
1 tsp. ground cumin
1 container (15-oz.) reduced fat Ricotta cheese
1 jar (24-oz.) salsa
1 cup shredded Monterey Jack cheese.
Directions: Heat oven to 375 degrees F and drain noodles as directed on package. While noodles are cooking, cook beef, onion, chopped pimento, cilantro, ground cumin and chili powder in 10-in. skillet over medium heat for 8 to 10 minutes, stirring occasionally, until beef is brown. Drain, place 5 of the noodles in bottom of ungreased 13x9x2 rectangular pan. Layer with 1 1/2 cups of the beef mixture, 1 cup of the Ricotta cheese and 1 1/2 cups of the salsa. Repeat with remaining noodles, beef mixture, Ricotta cheese and salsa. Sprinkle with Monterey Jack cheese. Bake uncovered 35 to 40 minutes or until hot. Let stand 10 minutes before cutting.

Southwestern Hamburger Casserole
Ingredients
1 lb. hamburger meat
1 pkg. taco seasoning
3/4 cup onion, finely chopped
3/4 cup green pepper, finely chopped
1 small can sliced black olives
1 (8-oz) jar of salsa (whatever degree of hot you like)
1 12-oz. carton of sour cream
1 medium pkg. Fritos or taco chips, crushed
8-ozs. fine shredded Mexican or cheddar cheese.
Directions: Mix hamburger meat and taco seasoning and flatten in bottom of a 9×13 casserole dish. Layer in other ingredients in this order: onion, pepper, olives, salsa, sour cream, taco chips and shredded cheese. Bake in oven at 350 degrees F for 45-55 minutes.
